Actually Trader Joe's has the cheapest tofu, formerly famous among vegans as 99¢ tofu. Now it costs $1.19 in Southeastern PA, I don't know about everywhere else. Still beats Whole Foods.
Also, I work at an independent health food store and while I can't vouch for others, our organic produce (all our produce is 100% Certified Organic) is often cheaper than Whole Foods.

Awesome! I'm a vegan and make my own hummus too. :) Some random thoughts:
Dried beans are even cheaper than canned beans, but obviously cooking them is more of an effort. They freeze well, though, so I cook up a big batch and freeze them in plastic bags or containers.
Stores that have reputations of being expensive often have really good prices on a few select items. Whole Foods, for example, has the cheapest tofu around. And your local hippie-run health food shop probably has oatmeal for a fraction of the price of the regular supermarket. So when you do your comparison shopping, leave no stone unturned.
If you can get over your fear of eating the same thing for two meals in a row (or if you were never afraid of it to begin with), there's no need to dress up leftovers to look like something else. Just heat and eat.
