I cook for two also and it is very difficult to budget meals for two. A pound of ground beef is too much for two and results in leftovers that often go to waste. However, a little extra time after grocery shopping will help you plan better.

Cut the ground beef package in two and wrap each half pound in foil. Cut a whole chicken into parts and wrap them individually. Purchase frozen shrimp in a resealable bag and only use what you need. Grow your own herbs like rosemary, basil and cilantro. Use boullion cubes instead of boxed or canned broths. If you can, grow your own vegetabldes like tomatoes and peppers. They are fairly easy to grow. Only buy a few fruits at a time. Farmer's markets tend to have better stock than the grocery store. Good luck!

This is an excellent article about thriving during a recession. If you are ever laid off the first thing to do is take an assessment of your finances including your savings and expenditures and look for ways to save.

A recession as you mentioned can also be an opportunity to make substantial financial gains especially in the real estate market. Right now we know it is definitely a buyers market. Snapping up a few good deals is not a bad idea.
